I eventually found the cause of the fault to be a shocking wiring job on the fog light... Right, after a bit more testing at the weekend I've discovered that the car is running hot, but not overheating. just. Basically sitting on the A1 below about 60 the temp stays just left of center, gently speed up to around 65-70 and it will creep up to about the far edge of the wavy bit of the temp...

That gauge looks right to me. The gauge isn't linear.
